Ingredients

200 grams yaki udon noodles
300 grams shrimp, peeled and deveined
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon sesame oil
1 cup mixed vegetables (bell peppers, carrots, broccoli)
2 cloves garlic, minced
1 teaspoon ginger, minced
2 green onions, chopped
Salt and pepper to taste
Instructions
Cook the yaki udon noodles according to package instructions and set aside.
In a large skillet or wok, heat the sesame oil over medium heat.
Add the garlic and ginger, stirring for about 30 seconds until fragrant.
Add the shrimp and cook until they turn pink, about 3-4 minutes.
Stir in the mixed vegetables and cook for an additional 2-3 minutes.
Add the cooked noodles, soy sauce, and oyster sauce, tossing everything to combine. Cook for another 2 minutes.
Season with salt and pepper to taste and garnish with chopped green onions before serving.
Notes
For a vegetarian option, you can substitute shrimp with tofu.
