  • 1 teaspoon bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef stew meat over medium heat.
  2. Add onion and garlic; sauté until tender.
  3. Stir in tomato paste, then add beef broth and bring to a boil.
  4. Add potatoes, carrots, thyme, bay leaf, salt, and pepper.
  5. Reduce heat, cover, and simmer for 1.5 to 2 hours.
  6. Serve hot.
