Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 4 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a bowl, toss the beef with flour, salt, and pepper.
  2. Heat the oil in a large pot over medium-high heat. Add the beef and brown on all sides.
  3. Add the onions and garlic, cooking until softened.
  4. Pour in the beef broth and bring to a boil.
  5. Stir in the carrots, potatoes, thyme, and bay leaf.
  6. Reduce heat to low, cover, and simmer for 2-3 hours until the beef is tender.
  7. Season with more salt and pepper if needed.

Notes

  • This stew tastes even better the next day!
  • For a thicker consistency, mix a tablespoon of cornstarch with water and add to the stew during the last few minutes of cooking.
