2 medium eggplants
3 tablespoons miso paste
2 tablespoons maple syrup
1 tablespoon soy sauce
2 tablespoons sesame oil
1 tablespoon rice vinegar
1 teaspoon minced garlic
1 teaspoon grated ginger
2 tablespoons sesame seeds (for garnish)
Instructions
Preheat the oven to 400°F (200°C).
Slice the eggplants in half lengthwise and score the flesh in a crisscross pattern.
In a bowl, whisk together miso paste, maple syrup, soy sauce, sesame oil, rice vinegar, garlic, and ginger.
Brush the miso mixture generously over the cut side of each eggplant.
Place the eggplants cut side up on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, until the eggplants are tender and caramelized.
Sprinkle with sesame seeds before serving.
