- 4 medium potatoes
- 1 cup broccoli, chopped
- 1/2 cup carrots, shredded
- 1/2 cup turkey bacon, cooked and crumbled
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork and bake them for about 45 minutes until tender.
- While the potatoes are baking, sauté broccoli and carrots in olive oil until soft.
- Remove the potatoes from the oven, allow them to cool slightly, then scoop out some of the flesh.
- Mix the scooped potato flesh with the sautéed veggies, turkey bacon, cheese, sour cream, garlic powder, salt, and pepper.
- Fill the potato skins with the mixture and bake for an additional 15 minutes.
