A delicious and nutritious meal option for kids featuring baked veggie tater and turkey bacon.

Ingredients

  • 4 medium potatoes
  • 1 cup broccoli, chopped
  • 1/2 cup carrots, shredded
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork and bake them for about 45 minutes until tender.
  3. While the potatoes are baking, sauté broccoli and carrots in olive oil until soft.
  4. Remove the potatoes from the oven, allow them to cool slightly, then scoop out some of the flesh.
  5. Mix the scooped potato flesh with the sautéed veggies, turkey bacon, cheese, sour cream, garlic powder, salt, and pepper.
  6. Fill the potato skins with the mixture and bake for an additional 15 minutes.

Notes

  • Serve with a side salad for a complete meal.
  • Use any leftover vegetable mix for another recipe.
