  • 4 chicken thighs
  • 1 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • salt and pepper to taste

Instructions

  1. In a bowl, mix chopped parsley, olive oil, red wine vinegar, minced garlic, red pepper flakes, salt, and pepper to make the chimichurri.
  2. Marinate the chicken thighs in part of the chimichurri for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken thighs for about 6-7 minutes on each side or until fully cooked.
  5. Serve the chicken with the remaining chimichurri drizzled on top.

Notes

  • Adjust the garlic to taste for a milder flavor.
  • Chimichurri can be made a day in advance for enhanced flavor.
