1 cucumber
8 ounces cream cheese, softened
2 tablespoons fresh dill, chopped
1 teaspoon lemon juice
8 slices bread, preferably whole grain
Instructions
In a bowl, mix the softened cream cheese with dill and lemon juice until well combined.
Slice the cucumber thinly.
Spread the cream cheese mixture onto the slices of bread.
Top half of the slices with cucumber slices, then place the other half of the bread on top to form sandwiches.
Cut the sandwiches into quarters and serve immediately.
Notes
