1 cup graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
2 (8-ounce) packages cream cheese, softened
1 cup brown sugar
1 teaspoon vanilla extract
3 large eggs
2 cups apples, peeled and chopped
1 cup caramel sauce
Instructions
Preheat the oven to 325°F (163°C). Prepare a baking dish by lining it with parchment paper.
In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish to form the crust.
In a mixing bowl, beat the softened cream cheese, brown sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing until fully incorporated.
Fold in the chopped apples and pour the cheesecake mixture over the crust.
Drizzle caramel sauce on top of the cheesecake mixture.
Bake for 45-50 minutes, or until the center is set. Allow to cool completely.
Chill in the refrigerator for at least 4 hours before cutting into bars.
