- 1 1/2 cups pistachios, finely chopped
- 1/2 cup unsalted butter, melted
- 2 cups graham cracker crumbs
- 1 cup ricotta cheese
- 16 ounces cream cheese, softened
- 1 cup sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup honey
- 1 teaspoon ground cinnamon
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, melted butter, and 1 cup of finely chopped pistachios. Press mixture into the bottom of a springform pan.
- In a large mixing bowl, blend cream cheese and ricotta until smooth. Add sugar and mix well.
- Incorporate eggs one at a time, then add vanilla extract, honey, and ground cinnamon; mix until fully combined.
- Pour the cheesecake mixture over the crust and smooth the top.
- Bake in the preheated oven for 45-50 minutes or until the center is set.
- Let it cool completely before refrigerating for at least 4 hours.
