Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 cup vegetable broth
  • 1 cup coconut cream
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon nutritional yeast
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the diced tomatoes and cook for 5 minutes.
  4. Pour in the vegetable broth and coconut cream, stirring to combine.
  5. Add in the dried basil, salt, black pepper, and nutritional yeast. Simmer for 10 minutes.
  6. Toss the cooked pasta into the sauce and mix well to coat.
  7. Garnish with fresh parsley before serving.
