  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup fresh strawberries, pureed
  • 1/4 cup strawberry preserves

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press this mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla, then mix in the eggs one at a time until well incorporated.
  4. Pour half of the cheesecake batter over the crust, followed by the strawberry puree and then the remaining batter.
  5. Swirl the strawberry preserves into the batter for decoration.
  6. Bake in the preheated oven for 60-70 minutes, or until the center is set. Turn off the oven and let the cheesecake cool inside for an hour.
  7. Chill in the refrigerator for at least 4 hours, preferably overnight before serving.

Notes

  • For a more intense strawberry flavor, add additional pureed strawberries into the batter.
  • Serve with whipped cream or fresh strawberries for garnish.
