  • 1 ½ cups graham cracker crumbs
  • ⅓ cup sugar
  • ½ cup unsalted butter, melted
  • 2 pounds cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 teaspoons ground cinnamon
  • ½ teaspoon nutmeg

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and mix well.
  4. Beat in eggs one at a time, then stir in cinnamon and nutmeg.
  5. Pour the filling over the crust and smooth the top.
  6. Bake for 60-70 minutes until set. Turn off the oven and cool with the door ajar.
  7. Chill in the refrigerator for at least 4 hours before serving.
