- 1 ½ cups graham cracker crumbs
- ⅓ cup sugar
- ½ cup unsalted butter, melted
- 2 pounds cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 teaspoons ground cinnamon
- ½ teaspoon nutmeg
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and mix well.
- Beat in eggs one at a time, then stir in cinnamon and nutmeg.
- Pour the filling over the crust and smooth the top.
- Bake for 60-70 minutes until set. Turn off the oven and cool with the door ajar.
- Chill in the refrigerator for at least 4 hours before serving.
