  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 8 oz cream cheese, softened
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs with melted butter and ¼ cup sugar, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth, then add the remaining sugar, eggs, vanilla, and cinnamon; mix until well combined.
  4. Pour the cream cheese mixture over the crust and smooth the top.
  5. Bake for 50-60 minutes, until the center is set. Let cool before refrigerating for at least 4 hours.
  6. Serve chilled, optionally dusting with additional cinnamon sugar on top.
