  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef cubes over medium heat.
  2. Add the onions and garlic, cooking until softened.
  3. Stir in the tomato paste, thyme, bay leaf, and season with salt and pepper.
  4. Pour in the beef broth and bring to a boil.
  5. Add the carrots and potatoes, then reduce heat and simmer for 1.5 to 2 hours.
  6. Adjust seasoning as necessary and serve warm.
