A classic beef stew recipe that warms the heart and fills the stomach.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 3 potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce

Instructions

  1. In a large pot, heat the oil over medium-high heat. Add the beef and brown on all sides.
  2. Add the onions and garlic, and cook until softened.
  3. Stir in the broth, carrots, potatoes, thyme, bay leaf, salt, pepper, and Worcestershire sauce.
  4. Bring to a boil, then reduce heat and simmer for 2 hours.
  5. Remove bay leaf before serving.

  • For extra flavor, sear the beef well before adding other ingredients.
  • Feel free to add other vegetables like peas or green beans.
