  • 4 strips turkey bacon
  • 1 cup diced chicken ham
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup pasta (your choice)
  • 2 cups fresh spinach
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add chicken ham, onion, carrots, celery, and garlic to the pot. Sauté until the vegetables are soft.
  3. Pour in the chicken broth and bring to a boil.
  4. Add thyme, salt, and pepper, then stir in the pasta. Cook until pasta is al dente.
  5. Fold in the spinach and lemon juice. Chop the reserved bacon and add it back to the soup.
