  • 4 cups vegetable stock
  • 1 cup white wine
  • 2 tablespoons olive oil
  • 1 cup mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a saucepan, heat the vegetable stock over low heat.
  2. In a separate large pan, heat the olive oil and sauté the onions and garlic until translucent.
  3. Add the sliced mushrooms and cook until softened.
  4. Stir in the Arborio rice and cook for 1-2 minutes until the rice is lightly toasted.
  5. Pour in the white wine and stir until absorbed.
  6. Add 1 cup of vegetable stock at a time, stirring frequently, until the rice is al dente and creamy.
  7. Remove from heat and stir in the butter and Parmesan cheese. Season with salt and pepper to taste.
