1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs
1 cup buttermilk
1/4 cup melted butter
1/2 cup cooked turkey bacon, chopped
1/2 cup chopped chicken ham
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, mix the cornmeal, flour, baking powder, and salt.
In another bowl, whisk the eggs and buttermilk together, then stir in the melted butter.
Add the wet ingredients to the dry ingredients and mix until just combined.
Fold in the turkey bacon and chicken ham.
Pour the batter into a greased cast-iron skillet or baking dish.
Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
