1 cup ricotta cheese
1 cup mascarpone cheese
1 cup powdered sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
2 cups crushed graham crackers
1/2 cup unsalted butter, melted
1/2 cup mini chocolate chips
2 tablespoons chopped pistachios
Instructions
Preheat the oven to 350°F (175°C).
In a bowl, combine the melted butter and crushed graham crackers to create the crust.
Press the mixture into the bottom of a greased baking dish and bake for 10 minutes.
In another bowl, mix the ricotta, mascarpone, powdered sugar, vanilla extract, and cinnamon until smooth.
Spread the filling over the crust and top with chocolate chips and pistachios.
Bake for an additional 15-20 minutes until set.
Allow to cool completely before slicing into squares.
