  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup sour cream
  • 1/4 cup powdered sugar
  • 1 tablespoon cinnamon sugar for topping

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese and granulated sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and ground cinnamon.
  5. Fold in sour cream until fully incorporated.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.
  9. Dust the top with a mix of powdered sugar and cinnamon sugar before slicing.
